We only use Agar-weed carefully selected by our buyers from all over the world, mainly in Japan and South-America. What is Agar? Agar = dietary fiber! Most of Agar is made of dietary fiber, around 100g of Agar has about 80.9g of dietary fibers in it, making it the most fiber rich food! To make it even better, these dietary fibers are soft and delicious. Agar is made of sea-weed. Red algae, especially Gelidium, Gracilaria is often used as raw material. Agar is a type of sugar that can be extracted from sea-weeds by hot water. Agar breaks apart when heated and forms back together after cooling down, forming jelly like structure. This jelly can be heated again to make it liquid again. This is called thermoreversibility and is one of the biggest properties of Agar. Agar has very high ability to bind liquids, and just 10g of Agar can make 1 liter of water solid. This as well is a great property of Agar. Gelatin can be used in similar way as Agar, but origins and properties are completely different. Agar hardens in relatively high temperature of 40 degrees of Celsius, meaning it will solidify even in room temperature. Additionally, once turned jelly, it needs to be heated up to 80 degrees to reduce it liquid again, making it heat resistant. Compared to Gelatin, witch melts in summer room temperature and needs freezer to become solid, Agar is easy to handle and use.
